I hope everyone had a marvelous weekend! I know I sure did. I learned a lot of things, and preoccupied myself with actually enjoying my family and friends.
I had planned on being busy, but seeing that I wanted to have a change of pace, I cleaned my already clean house (because I am a clean freak, I think), I got to throw away a lot of old papers that were stacked away in a closet, and I even got to make some of my healthy and sweet coconut fudge truffles to share with my husband and some friends. Yes, I use my own recipes!
I really enjoyed getting to spend time with my friends and family though. Often I get so busy that I forget to spend time with the people that matter most to me. Work can cause that, school can cause that, charity based activities can cause that, even social media, but most of all it’s your decision.
It’s your decision to take back your life – to take charge of it, rather than allowing it to steal your joy. The people all around you were put into your life for a reason, make the most of it and show them you care.
With that said, I would just encourage you to take some time and be happy. Happy within yourself and with those you love. Take time away from the internet, phone, and all of your activities that keep you busy and remember to tell the people in your life that you love them. It is one thing to love people and a whole different thing to love them and tell them that you love them so that they know.
So there is my little thought, because I care.
Now on to food because that is what you came for…
I have really been craving dessert lately. So I made this. A vegan chocolate mousse smoothie that taste just as good as it sounds. I swap the chocolate for carob, and it tastes just the same!
No kidding you, after I made this smoothie and garnished it, I was in sheer amazement that I could even learn to liquify a vegan chocolate mousse pie into such a delicious smoothie! Yay!
So yes, that means that it is healthy, you can have it for breakfast, and yes you can have it for dessert.
This vegan chocolate mousse smoothie is so rich, chocolatey, creamy, and silky sweet that I don’t even think you will miss the pie crust. Or you technically could put it in a pie crust (tell me how that tastes though) as an experiment :P
This recipe only takes five minutes to make, so why not indulge in this dessert in a glass today! You have to use a straw though (although I bet someone will use a spoon). It’s that good, that decadent, and that easy.
- 1-1/2 cups vanilla almond coconut milk
- 2 frozen ripe bananas
- ¼ cup pecans
- 2 tbsp carob or cocoa powder
- 1-1/2 tbsp peanut butter
- 1 tbsp coconut flakes
- 1 to 2 tsp maple syrup
- Place all ingredients as listed into the blender and blend until smooth and creamy.
- Top with coconut shreds and pecans for garnish!
Enjoy this recipe, and make sure to let me know if you put it in a pie crust :) No seriously, you may be on to something if you use gluten free graham-style crumbs and sort of layer it in this smoothie! That just sounds like something to try!
